Gluten-Free Banana Nut Muffins

2 eggs
1 tsp vanilla
1/2 cup honey
1/4 cup olive oil
2 large ripe banana (I throw bananas that go brown in the freezer for baking)
1 3/4 cups gluten free flour (I get Bob’s Red Mill in bulk at Costco)
1/4 cup flax meal
2 tsp xantham gum
1 tsp baking powder
1 tsp baking soda
2 tsp pumpkin pie spice
handful golden raisins
handful chopped walnuts
handful flax seeds

Blend eggs, oil, banana, vanilla, olive oil.  Combine dry ingredients and mix, then add egg mixture and blend just until combined.  Throw in handfuls of nuts, raisins, and walnuts and combine.  Turn into greased muffin tins, about 2/3 full, and bake for 15 min at 350.
